Braised Pork over Rice (Rou Zhao)

- Meat
- 2 lb pork belly (diced)
- 2 lb pork shoulder (diced)
- 6 shallots (chopped)
- 3 garlic cloves (chopped)
- 1 Tbsp cane sugar
- 1 tsp ginger (minced)
- Sauce
- 3/4 cup soy sauce
- 1/4 cup rice wine
- 1/4 tsp five spice
- 2 whole star anise
- 1 cinnamon stick
- 1 tsp pepper
- 1 cup fried shallots
- 3-4 cups water
Instructions
- Preheat oven to 300F
- Blanch the diced pork (2 minutes)
- Heat sugar and oil and saute the pork (10 minutes)
- Add the shallots and garlic (5 minutes)
- Add soy sauce, five spice, rice wine, star anise, cinnamon, and pepper (10 minutes)
- Add in fried shallots and water
- Bake for 2.5 hours at 300F
- Move to stovetop and boil on medium for 30 minutes
- Serve over rice. Top with green onions
