Sage Sausage Stuffing

- 6 Tbsp butter
- 1/2 lb sage sausage
- 2 yellow onions (diced)
- 2 celery stalks (diced)
- 1 fennel (diced)
- 1 granny smith apple (diced)
- 1 d'anjou pear (diced)
- 2 Tbsp italian parsley (chopped)
- 1 tsp sage
- 2 tsp rosemary
- 1 Tbsp kosher salt
- 1 tsp black pepper
- Bread and Binding
- 16 cups bread cubes (1 inch diced)
- 1 1/2 cup chicken broth
- 1/2 cup parmesan cheese
- 2 eggs (beaten)
Instructions
- Bake bread cubes at 350F for 7 minutes. Set aside in a bowl.
- Saute meat and vegetables.
- Toss with bread cubes, broth, cheese, eggs
- Spread in a 9×12 baking dish. Top with parmesan cheese. Bake at 350F for 30 minutes.
