Spicy Sausage, Potato and Kale Soup

- 1 lb spicy italian sausage
- 2 yellow onions (diced)
- 3 garlic cloves (minced)
- 1 tsp kosher salt
- 1 tsp black pepper
- red pepper flakes (to taste)
- 2 lbs kale (chopped)
- 1/4 tsp nutmeg
- 1 tsp oregano
- 1/2 lb red potato (sliced)
- 2 quarts chicken broth
- 1/2 pint heavy cream
Instructions
- Heat olive oil
- Saute the sausage, onions and garlic. Add salt, pepper and red pepper flakes to taste.
- Add kale and cook down. Season with nutmeg and oregano.
- Add in potatoes, chicken broth. Bring to boil
- Simmer until potatoes are cooked and add heavy cream to thicken.
